1 cauliflower head
½ tsp seasoning & rub blend
½ tsp garlic powder
½ tsp paprika
¼ tsp cayenne pepper (optional)
½ tsp Mrs. Dash No Salt Seasoning
1 tablespoon Wingman’s Buffalo Sauce
2 tablespoons Earth Balance butter, melted
2 tablespoons egg replacement (I use Just Egg)
2 tablespoons cashew milk
1 cup Crispy Seasoned Chicken Fry Batter Mix (of your favorite bread crumbs)
Preheat oven to 465 degrees.
Remove green stems and leaves from cauliflower, then break into florets. Varying sizes are fine. Rinse with cold water and lay on a paper towel to dry. Pat dry if needed
to remove excess water.
Drizzle a little olive oil on the florets and toss with spices. Then pour the butter, egg replacement and cashew milk over the florets.
Toss with the Crispy Seasoned Chicken Fry Batter in a one-gallon zip lock bag.
Place cauliflower bites in a dish with cooking spray and bake for 20-45 until golden brown, and crispy to your liking.
Pour the Wingman Buffalo Sauce over the cooked bites
and return to the oven
for 5-10 more minutes.
When the bites are done, transfer to a serving dish and add your favorite dipping sauce of vegan Ranch, vegan blue cheese or BBQ sauce.
